Thai Quinoa Recipe


Here is a delicious recipe which I used in my last cooking class with my holistic health counseling clients.

Prep Time: 5 minutes Time: 15 minutes: 4 servings

Ingredients: 1 cup dry roasted quinoa 1/2 cup red pepper, diced 2 cloves garlic, minced, 2/3 cup coconut milk ,1 cup water, Pinch of salt

Directions: Rinse quinoa in a fine mesh strainer. Bring water and coconut milk to a boil. Add quinoa, garlic, salt and chili flakes. Bring back to a boil, cover and reduce heat. Cook for 12-15 minutes. Remove from heat, stir in red peppers and sesame oil. Let sit covered for 5 minutes, then serve. YUM!

Great post, quinoa is such a great source of energy, I've been cooking quinoa for 12 years and can't get enough. I try to eat it at least 4 times a week. Do you know how quick your body converts it to energy?
