Thank You 2007

I sit her in gratitude and deep appreciation for the amazingness of 2007. This has been the best year of my life (I think I say that every year!) Well it has been an outstanding year for me. I believe my happiest achievement has been the realization that all of my food issues are GONE! I am FREE.

I want to thank the dozens of clients I have been blessed to work with this year. I would not be who I am or where I am without you. Thank you for believing in me and for trusting me with your open heart and your dreams. I believe in you TOO.

I trust that 2008 will be better than ever and I can't wait to support you more and more in the New Year.

Let Your Light Shine Bright

Are you letting your light shine or are you allowing yourself to feel tired, blue and cranky this season?

Yesterday I came home from a full day feeling run down, cranky and negative which doesn't happen often but when it does I take it as an opportunity to learn and grow.

I am always uplifted and inspired by Marianne Williamson's poem "Our Deepest Fear."

"There is nothing enlightened about shrinking so that other people won't feel insecure around you. We are all meant to shine, as children do. We were born to make manifest the glory of God that is within us. It is not just in some of us; it is in everyone. And as we let our own light shine, we unconsciously give other people permission to do the same. As we are liberated from our own fear, our presence automatically liberates others."

Today I am choosing to allow my light to shine bright! I intend to live in gratitude and to be awed by the magic of the Holiday Season as if I am a child again. My intention today is to raise the consciousness of everyone I meet and therefor the consciousness of the planet!

Thai Quinoa Recipe


Here is a delicious recipe which I used in my last cooking class with my holistic health counseling clients.

Prep Time: 5 minutes Time: 15 minutes: 4 servings

Ingredients: 1 cup dry roasted quinoa 1/2 cup red pepper, diced 2 cloves garlic, minced, 2/3 cup coconut milk ,1 cup water, Pinch of salt

Directions: Rinse quinoa in a fine mesh strainer. Bring water and coconut milk to a boil. Add quinoa, garlic, salt and chili flakes. Bring back to a boil, cover and reduce heat. Cook for 12-15 minutes. Remove from heat, stir in red peppers and sesame oil. Let sit covered for 5 minutes, then serve. YUM!

Quinoa You Gotta Try It!


Good Morning,
Here is a favorite food that I love to share with my friends, loved ones and clients as a Holistic Health Counselor.

Quinoa (pronounced “keen-wah”) was a principal grain of the Incas, given sacred status as a “mother grain” and thus targeted by Spanish colonization tactics. For 400years it survived only in remote, inaccessible areas of the high plains in the Andes.

Quinoa is a real superfood that will give you lots of sustained energy because it is a complex carbohydrate and a complete protein(one of the few vegetarian sources). It is chock full of calcium (has more than milk), trace minerals, and essential fatty acids!

Quinoa is gluten-free – valuable for those with wheat allergies. You can buy quinoa at your local health food store tour. ENJOY!

Eight Tips for Embracing the Darkest Part of the Year

I woke up in the dark with a lightness in my heart, flipped on the Christmas tree lights and some rockin music and began my morning dancing in the dark! I love it. I love life.

Today I am writing my first e-book. It is called "How to Feel Hot and Healthy in Your Body 365 days a year." What do you think?

I intend to turn it loose by December 28th, 2007 just in time for the New Year.

Have you let the darkness of the late fall days bring you down?

If you answered yes than here are some great tips for embracing the darkest part of the year:

1. Get in rhythm with nature and tuck yourself into bed by 7 p.m. at least one night a week. Stay in bed until the sun shines again the next day.

2. Take a hot bath with Epsom salt and lavender essential oil.

3. Go sledding and pretend you are a kid again! Go fast!

4. Cozy up near a warm fire with a cup of peppermint or ginger tea with your sweety.

5. Go to the library and get a ton of good books that you would never have a chance to read during the hectic summer months.

6. Chop up onions, carrots, celery, garlic, sweet potatoes and lentils in a crock pot before you leave your house in the morning so you can come home to a healthy and nutritious meal.

7. Live in gratitude for the beauty of your life.

Kale with Raisins and Toasted Pine Nuts

As a holistic health counselor I love sharing easy to make delicious and nutritious recipes with my clients and friends. Kale is my favorite green leafy vegetable because it tastes so good and it is packed with an abundant supply of vitamins, minerals and fiber. Greens are good for your lungs and immune system. I recommend eating at least 1-3 servings of greens daily to keep the Doctor away!

Kale with Raisins and Toasted Pine Nuts

Serves 4-6

¼ cup toasted pine nuts
¾ pound kale (about 6 cups chopped)
2 cups water
2 teaspoons extra virgin olive oil
2 garlic cloves, minced
1/3 cup of raisins
sea salt to taste

1) Toast pine nuts in a dry skillet stirring frequently so not to burn or place in a 325 degree oven for 5 minutes or until golden. Set aside.

2) Strip the leaves off the kale stalks. Discard stalks and roughly chop kale. Bring the water to a boil in a large skillet that has a tight fitting lid. Add the kale and cook, covered over high heat, stirring occasionally, until tender, approximately 5 minutes.

3) Rinse out and dry the skillet, then use it to heat the olive oil over medium heat, lifting and tilting the pan to coat. Add garlic and sauté for 15 seconds. Add raisins and sauté for 30 seconds to 1 minute, stirring constantly to prevent browning or burning. Raisins should be glossy and slightly puffed.

4) Add greens and stir to combine. Season with salt to taste and cover for a minute until greens are heated through. Serve hot, garnished with toasted pine nuts.

This is the month to give love to yourself. Treat yourself as a precious lover whom you adore. Do everything to make your life more loving, healthy, happy, and creative. Fulfill yourself completely.

Do you remember your intentions, goals, resolutions and visions for yourself for 2007?

Are you happy and proud that you followed your heart and lived in integrity or are you disappointed with your 2007 progress?

If you are happy congratulations! If you are disappointed in your 2007 results please be gentle with yourself and know that you still have 23 days to turn it around before the end of the year!

Go back to your notes, journal, calendar or speak with your friends you shared your 2007 visions, goals and resolutions with. Get support, follow your heart and do your best!
